Hello there

Today we made super healthy Jam Dot Cookies. The name is cookies but these little babies are more like energy bars, no flour, eggs or butter in the dough! Only nuts, oats and honey – and the results are wonderful!

 Here is the recipe:

Jam Dot Cookies

 Servings: 36
1 cup whole wheat flour, sifted
1 cup sliced almonds, ground into a coarse meal in the food processor
1 cup oats, ground into a coarse meal in the food processor
1 teaspoon cinnamon
¼ cup grape seed or canola oil (I used grape seed oil)
½ cup maple syrup (I used honey)
½ freshly squeezed orange juice
1 teaspoon vanilla
fruit jam, any taste you like
Preheat the oven to 375 degrees. Spray a baking sheet with vegetable spray and set aside.
In a mixing bowl combine the sifted whole wheat flour, ground almonds, ground oats and cinnamon.
In a separate bowl combine the oil, maple syrup or honey, orange juice and vanilla.
Combine the wet ingredients with the dry and mix well. Scoop one tablespoon of batter for each cookie onto the prepared baking sheet.
Using  your thumb make a well in the middle of the cookie. Fill the middle with 1 teaspoon of fruit jam and repeat the process with the remaining cookies.
Bake for 15-18 minutes or until the cookies are golden brown.
To make a wheat free version omit the flour and double the almonds and oats.
